
Locale’s Executive Chef Paolo Barone is from Gorizia in the region of Friuli Venezia Giulia in Italy. He studied at the Hotel School of Trieste, and worked in several Italian restaurants before moving to London in 1994. After doing several stages in Osteria Basilico and Cantinetta Venegazzu he worked with Giorgio Locatelli before joining Locale Restaurants from its inception in 2005. He is frequently invited to demonstrate the simplicity of his rustic dishes at food events around the country, appearing alongside Theo Randall at this year’s “La Dolce Vita” www.ladolcevitaevent.co.uk/2010/ celebration of all things Italian in London.
Paolo is a master of self sufficiency he uses his considerable talents to live as his forefathers making his own ingredients such as cheese, pasta, and even beer, cure and smoke his own meats and sausages, as well as growing his own herbs and vegetables.
Paolo is on a mission to ensure all the skills and traditions of his Italian forefathers are passed on to a new generation and are not lost to the modern world. He is soon to star in his own TV series demonstrating the Good Life- Italian style.

His kitchen team are all trained to his standards and undergo a rigorous training programme which is supervised by experienced external examinations to ensure all of the fantastic knowledge he has accumulated gets passed on.
