
Ingredients
1lb Fresh crab meat
4tbs Mayonnaise
2tbs Wholegrain mustard
Juice of 1 lemon
Chives
Salt and pepper
1/4 of an avocado
Method
1. Dice the avocado.
2. In a bowl mix crab meat with the mayonnaise, mustard, lemon juice and chopped chives. Season with salt and pepper to taste.
3. On a starter plate, using a cylindrical mould, pour chopped avocado, then place the 2 tbs of crab on top.
4. Garnish with balsamic reduction, parsley and chive.
