ORANGE PANNA COTTA
PANNA COTTA ALL' ARANCIA

Ingredients

100grm Caster sugar
0.3ltr Double cream
0.3ltr Whipping cream
Zest of one orange
Zest of 1/2 lemon
1tbs vanilla essence
2 leaves of gelatine

100grm Caster Sugar
100grm Water
Zest of on orange
3 slices of peeled orange
One sprig of fresh mint

Method

1. Put sugar, double cream, whipping cream, orange zest, lemon zest and vanilla in a thick bottom pan.

2. Bring slowly to a simmer.

3. Allow to cool a little and add the gelatine already soaked in cold water.

4. Strain the cream through the sinua and fill the moulds.

For the sauce

5. Peel the orange and cut the zest in julienne.

6. Gring to boil the water and sugar. Boil for 2-3 minutes.

7. Add the orange zest and reduce the sauce till creamy.

8. Rest the panna cotta in the fridge for at least 6 hours before serving.

9. Serve on a flat plate with 3 slices of fresh peeled orange and garnish with a leaf of mint.
