SEAFOOD LINGUINE
LINGUINE AL FRUTTI DI MARE

Ingredients

4 Clams
5 Mussels
2 Headless prawns
1 Head on king prawn
3 Baby squid
3 Baby octopus
1tbs Chopped garlic
1/2 tbs Chilli
Sprinkle of chopped flat leaf parsley
1tbs Tomato concasse
1tbs Tomato sauce
120grm Linguine
1tbs Extra virgin olive oil
1tbs Fish stock
1/2 Glass of white wine

Method

1. Saute all of the fish with garlic, chilli, chopped parsley and white wine and season it.

2. Add tomato sauce and tomato concasse and the fish stock.

3. Cover with lid and cook till mussels and clams open.

4. Season with salt and pepper.

5. Saute the linguine cooked "al dente" in the sauce.

6. Serve in a pasta dish with fish on top and a sprig of flat leaf parsley.
